Happy Cinco de Mayo, everyone! I love all the positive energy around this day. While this day is thought to be associated with Mexican Independence Day, it actually commemorates the Mexican army’s 1862 victory over France at the Battle of Puebla during the Franco-Mexican War (1861-1867). If you are looking for some last minute, easy dinner Cinco de Mayo themed recipes for tonight, I found a few that you might like:

  • Cilantro lime rice – This is a Chipotle copy. If you don’t have minute rice, some microwave ready rice would work too.
  • Mexican quinoa stuffed peppers – You might have to stop by your grocery shop on your way home if you don’t have all the ingredients but this is very easy to put together and healthy to boot. This would be a nice recipe to entertain with.
  • Mexican Corn on the Cob – I absolutely love Mexican street corn and the hardest thing about this recipe is finding the Cotija cheese (for us Canadians).  There are some specialty shops in Toronto that carry it but for an easy grocery store substitute, go with feta as it is salty and has a similar consistency. Not the same but still tasty.

What am I preparing for dinner? I’m planning on grilling some chicken, following Kalyn’s Kitchen instructions (although it will be quick marinate), some refried beans, rice and Baja chopped salad. Enjoy your dinners and let me know what your cooking!
