Second full week in January and keeping up the meal planning. Just to recap last week’s meal plan, I followed the meal plans until the weekend. We still had the flank steak I planned for Saturday but we had it the past Sunday instead with hasselback-style roasted potatoes. On Saturday, we had turkey avocado burgers I had made at Supperworks in the fall. I don’t feel bad for not following the meal plan to a T as I still got to empty out the fridge and we didn’t eat out (or get take out!).

I ended up baking some banana applesauce blueberry muffins on Sunday and will share the recipe review soon.

The plan of this week is to continue cleaning out the freezer! Not a lot of recipe shares as most of it is pre-made or will be throw together, no-recipe meals.

Monday

Pasta with tomato sauce and sauteed shrimp and baby spinach.

Tuesday

Frozen pizza and soup (ready-made/tetra pak).

Wednesday

Chili with garlic bread. I made two extra batch the last time so don’t have to make it.

Thursday

Korean beef bowl with jasmine rice. This is a go-to recipe for me from Damn Delicious. Simple and tasty. I like to top with a fried egg for extra yumminess.

Friday

Tortellini soup – I’ve been making this easy recipe by Rachael Ray for years and no longer even follow a recipe. It’s simply frozen cheese tortellini in chicken broth with lemon zest and baby spinach.

Saturday

Pan-fried chicken breasts with steamed broccoli and mashed potatoes.

Sunday

Saccotini (little pasta pouches) in tomato sauce.

Hope everyone stays warm this week (especially in Toronto where there is snow and a cold snap) and keep eating well!

  1. It’s great that you make time & effort to planning your meals. In this day & time, its so easy to be completely bombarded by life that at times, fast food is just the quickest route. But a bit of sacrifice & time can really pay off. Keep it up! And thanks for sharing your plan!

    1. Simple is the key! I love making more complex dishes but definitely not up for it at the end of a long workday and with a hungry child who needs to eat soon.

    1. It’s a great way to save money! I know there is food in there that has lived there for years and needs to be thrown out, which is such a waste of money.
