Oxtail ragu sauce
This simple, rich, meaty sauce is easy to make at home. If your local supermarket doesn’t have oxtail, check out an Ethic supermarket (e.g. Chinese/Asian) and they should have it at the meat counter. This sauce can be served over pasta, gnocchi, omelette, with rice or a piece of fresh crusty bread. Versatile and delicious!

Instructions
  1. Heat a fry pan over medium-high heat and add a turn of olive oil to the pan. Once pan is heated, add oxtail and brown, 3-5 minutes each side.
  2. Once pan is heated, add oxtail and brown, 3-5 minutes each side. No need to fully cook but browning it seals in the flavour.
  3. Place oxtail into slow-cooker. Add onion, tomato puree, rosemary, salt and pepper.
  4. Turn slow-cooker on. Cook on low for 6-8 hours or high for 3-4.
  5. Serve immediately and freeze any leftovers.
